Whip up a fresh and fast dinner with this Instant Pot cilantro lime shrimp scampi pasta. It cooks quickly in the Instant Pot and has the fresh flavors of cilantro and lime.

Instant Pot Cilantro Lime Shrimp Scampi Pasta
1 lb cooked shrimp, peeled
2 tbsp. olive oil
1/2 tsp. red pepper flakes
1/4 tsp. salt
4 tbsp. minced garlic
1/2 cup fresh cilantro ,chopped
1/4 cup chicken stock
1/4 cup white cooking wine
5 tbsp. lime juice freshly squeezed ( 3 tbsp. for shrimp marinade)
4 oz pasta linguine
fresh cilantro, garnish

In a large bowl add your shrimp, 3 tablespoons lime juice, olive oil, red pepper flakes, salt and garlic.
Toss to coat evenly.
Cover and refrigerate for 2 hours.
Break your pasta in half and add it to the Instant Pot.
Pour 3 cups of water, and 1 tsp. salt over the pasta.
Place the Instant pot on manual high pressure for 5 minutes.
Do a quick release.
Remove the lid, set to the side.
Add shrimp, chopped cilantro, chicken stock, white wine, 2 tablespoons freshly squeezed lime juice to the pasta.
Mix to coat.
Taste, and add more salt if needed.
Garnish with chopped fresh cilantro, red pepper flakes, and grated lime zest.
