Enchilada rice is a very simple, microwave-friendly recipe that I created by throwing random things into my rice one day. If you use instant rice, you can whip up this easy meal in under five minutes!

How to Make Enchilada Rice
- Instant rice
- Enchilada sauce
- Hot sauce (optional)
- Mexican cheese (or another cheese blend)
First, you could totally do this with normal rice over the stove or prepared in a rice cooker or anything. I used microwave instant rice, but you don’t have to. It only took 3 and a half minutes to cook in the microwave though. 😀 I used white rice in a normal-sized bowl. This is for a single serving.
After your rice is cooked, pour in your preferred brand of enchilada sauce (I’m using Old El Paso… You could theoretically make your own homemade enchilada sauce but that wouldn’t take five minutes, now would it? ;)). These aren’t exact measurements, but around a quarter of a cup will do. It depends on the consistency of your rice when it’s finished cooking. I basically just poured a layer over half of the top of the rice if that makes sense (like a circle in the middle taking up half of the space). I also like to add a dash of hot sauce for flavor. 🙂
Next, add a generous handful of Mexican cheese or another cheese blend to your rice. Some kind of blend with cheddar and a white cheese is good.
Roughly combine the ingredients, then pop it in the microwave for another 30 seconds. If your rice is too dry, you can add more sauce, or if it’s too runny, you can cook it for a little longer.
Once the cheese is melted, stir everything together and you’re done! You should end up with orange-colored rice that tastes delicious. 🙂
