Vegans rejoice! This butter alternative is dairy- and egg-free and all natural. It’s essentially a margarine, and it can be used in all the ways that a regular butter would be — spreading, sauteing, frying, baking, and cooking, as the product’s website notes. The taste is slightly sweet, almost like a butter made with real cream would taste. It looks like butter, tastes similar (or better) to butter, and smells like sweet butter.
My only qualm about this product is that fresh out of the fridge, the consistency is very hard and almost impossible to spread. If you were putting it on something like toast or waffles or pancakes, you might spread it clumpily and then microwave the whole thing so it melts a bit. If you’re using the “butter” in a recipe, you could let it sit out for a while to soften and then it wouldn’t be a problem.
Still, I mostly use this for waffles, and I don’t want to toast (aka heat up) my waffles only to have the hard butter destroy my waffle to the point that I have to microwave it, which is just heating it even more. Overall Earth Balance butter is a great product if you have time to let it sit out and soften before each use.
